Su ürünlerinde bulunan parazitlerin hijyenik yönden önemi

Abstract

Beslenmede deniz ürünlerinin önemli bir protein kaynağı oldukları her zaman belirtilmektedir. Bu durum özellikle kıyı bölgeleri, adalarda yaşayan kişiler için daha doğrudur. Son yıllarda deniz ürünlerinin popülaritesi de bir artış görülmekte ve bunun sashimi ve sushi, ringa balığı, dumanlanmış somon balığı gibi egzotik deniz ürünlerinde olduğu bildirilmektedir. Su ürünlerindeki gelişmeye paralel olarak deniz ürünlerinde bulunan parazitlerde de bir artış görülmektedir. Bu durum, ekonomik bakımdan önemli bazı deniz ürünlerinde patojen etkisi olan parazitleri gündeme getirmektedir.

There has always been an intimate dependency among members of certain cultures on marine organisms as a source for protein. This especially true of coastal, peninsular, and island peoples. In relatively recent years an increase in the popularity of seafood has occured. The main reasons are the increasing popularity on the part of the more urbane segments of advanced societies for exotic foods such as sashimi and sushi, herring and smoked salmon; and the development of mari culture worldwide. Because of these developments, there has been an increase in interest in the parasites of marine animals. However, this interest has been focused primarily on those parasites that are pathojenic to economically important marine animals.
