Abstract: | Bu çalışma salça üretim sanayiinde büyük bir sorun oluşturan ve bu nedenle ekonomik kayıplara yol açan mikrobiyolojik bozulmalara ışık tutması, bu bozulmaların etkeni olan mikroorganizmaların hangileri olduğu ve üretimin hangi aşamasında ne yoğunlukta bulunduklarının belirlenmesi amacıyla yapılmıştır. Bunun için iki farklı firmadan, salça üretiminin tüm aşamalarını kapsayacak şekilde örnekler alınmış ve bu örneklerde hem mikrobiyolojik, kimyasal ve fiziksel analizler hem de bakteri ve maya izolasyonları yapılmıştır. Analizler sonucu elde edilen bulgulara göre salça üretimi sırasında rastlanılan bakterilerin Bacillus, Lactobacillus, Listeria, Corynebacterium, Kurthia ve Streptococcus cinslerinin; mayaların ise Aureobasidium, Candida, Endomycopsis, Hansenula, Kloeckera, Saccharomyces, Torulopsis ve Trichosporon cinslerinin temsilcileri oldukları belirlenmiştir. Bu mikroorganizmaların salça üretimi sırasında sayıca en fazla bulundukları aşamaların ise hammadde, yıkama sonrası, palper çıkışı ve 1. evaporasyon sonrası (1. efekt) olduğu belirlenmiştir. Ayrıca salça üretiminin 6 değişik aşamasından iki üretim sezonunda 14 farklı zamanda alınan örneklerde % kurumadde, briks, pH, % asit, % tuz ve % indirgen madde analizleri yapılmış ve değişimleri izlenmiştir. This study was carried out with the aim of clarifying the microbiological decays which constitutes a great problem and leads to economical losses in tomato paste, and determining which microorganisms were the agents of these decays and in what concentration they existed at which stage of production. With this purpose, samples were taken from two different companies, comprising all the stages of paste production and both microbiological, chemical, physical analyses and bacteria, yeast isolations were carried out with these samples. According to the results obtained at the end of analyses the bacteria encountered during paste production were determined to be the representatives of the genera Bacillus, Lactobacillus, Listeria, Corynebacterium, Kurthia, Streptococcus, and the yeasts to be the representatives of the genera Aureobasidium, Candida, Endomycopsis, Hansenula, Kloeckera, Saccharomyces, Torulopsis, Trichosporon. The stages at which these microoorganisms were maximum in number were determined to be the crude material, after washing, palper outlet and after the first evaporation (first effect). Moreover, in the samples taken at 14 different times in two production seasons of the 6 different stages of paste production, percentage dry matter, brix, pH, percentage acidity, percentage salt and percentage reduced matter analyses were conducted and the changes were observed. |
