Yerli ve bazı yabancı viskilerin kalite kontrolleri üzerinde bir araştırma

Abstract

Bu çalışma, ülkemizde üretilen yerli Ankara viskisi ile bu viskiye ait suma, dinlendirilmekte olan ham viskiler ve ülkemizde satılmakta olan bazı ithal viskilerin fiziksel, kimyasal ve duyusal özelliklerini belirlemek amacı ile gerçekleştirilmiştir. İncelemeye alınan ve araştırmanın amacına göre bileşimi ortaya konan suma, yerli ve yabancı viskilerin bileşim bakımından tüzüklere ve Avrupa standartlarına uygun olduğu saptanmış, yalnız örneklerin metenol oranlarının gıda maddelerin tüzüğünün 523, maddesine uygun olmadığı belirlenmiştir.
