dc.description.abstract | Stok salamura sebze ve meyvelerde bozulma etkeni olan mayaları saptamak amacıyla yapılan bu araştırmada, Bursa ilinde faaliyetini sürdüren iki gıda kuruluşundan alman 48 adet salamura örneği incelenmiştir. Bu örnekler, 1996-97 sezonunda işlenen stok salamura sebzeler olup farklı zamanlarda alınmıştır. Araştırma materyali 48 adet örnekten toplam 81 maya suşu izole edilmiştir. İzole edilen maya suşları Yeast Identification PC Program: Version 2.0'ya göre 13 cins ve 23 türe sınıflanmıştır. 10 cins ve 20 türün doğruluğu Lodder (1970) ve Kreger-van Rij (1984)'e göre kontrol edilmiştir. Tanısı yapılan cins ve türler Arxiosyma tetturis (2 suş), Bullera variabilis (7), Candida hlankii (1), C. castettii (1), C. caîenulata (1), C. dendrica (1), C. glabrata (3), C. haemulanii (1), C. shehatae (1), Cryptococcus macerans (2), Debaryomyces hamenii (1), Dekkera cııstersiana (9), Nadsonia commutata (1), Pichia acaciae (1), P. amethionina var. amethionina (4), P. coctophila (1), P. pastoris (1), Rhodotorula minuta (12), Saccharomyces cerevisiae (4), Torulaspora delbrueckii (22), Tremella brasiliemis (1), T. foliacea (2), Trichosporon beigelii (2)'dir. | tr_TR |
dc.description.abstract | 48 samples, taken from two well-known food plants of Bursa region, were investigated to determine the yeasts causing spoilage of stock brines of vegetables and fruits. The samples were taken at different times of 1996-97 season. 81 yeasts species were isolated from these 48 samples. Isolated species were classified into 13 genus and 23 species to analysis by "Yeast Identification PC Program: Version 2.0" whereas 10 genus and 20 species were validated with referance to Lodder (1970) and Kreger-van Rij (1984). Identified yeasts are namely; Arxiozyma telluris (2 strains), Bullera variabilis (7), Candida blankii (1), C. castellii (1), C. catenulata (1), C. dendrica (1), C. glabrata (3), C. haemulanii (1), C. shehatae (1), Cryptococcus maceram (2), Debaryomyces hansenii (1), Dekkera custersiana (9), Nadsonia commutata (1), Pichia acaciae (1), P. amethionina var. amethionina (4), P. coctophila (1), P. pastoris (1), Rhodotorula minuta (12), Saccharomyces cerevisiae (4), Torulaspora delbrueckii (22), Tremella brasiliensis (1), T. foliacea (2), Trichosporon beigelii (2). | en_US |
