Bazı domates çeşitlerinin konserveye uygunlukları üzerinde çalışmalar

Abstract

Bu çalışmada, 5 domates çeşidi ( Roma VF, Napoli VF, Su­per California, Canery Row, Peel Mech ) farklı iki dolgu sı­vısı ( 1: % 1 NaCl + % 0.1 askorbik asit, 2: % 1 NaCl + % 0.1 askorbik asit + % 0.2 CaGlg ) kullanılarak konserveye işlenmiş ve konserve yapımına uygunlukları araştırılmıştır. Ayrıca ka­ranlıkta ve güneş ışığı alabilen yerde depolanan konserveler birbirleriyle kıyaslanarak güneş ışığının konserve kalitesine etkisi belirlenmiştir. Araştırma sonucunda, tüm domates çeşitlerinin konserve ya­pımına uygun olduğu saptanmıştır.

In this study, 5 tomato varieties ( Roma VF, Napoli VF, Super California, Canery Row, Peel Mech ) canned with two different brines which consist of ( 1: % 1 RaCl + % 0.1 ascor- bic acid, 2: %1 NaCl + % 0.1 askorbic acid + % 0.2 Ca012 ) and their qualities were investigated. In addition, the effects of sunlight on the guality of canned tomatoes were investigated by keeping the cans in the dark and under the sunlight. According to the results of this study, all of the tomato varieties were suitable for canning.
