Bursa ilinde bitkisel yağ sanayiinin ekonomik yapı ve sorunları

Abstract

Türkiye’de bitkisel yağ üretimi son yirmi yılda büyük artış kaydetmiş ve 1993 yılı itibariyle toplam bitkisel yağ üretimi 1 milyon tonu aşmıştır. Yapılan çalışmaya göre; tarıma dayalı sanayi bakımından oldukça gelişmiş durumda bulunan Bursa ilinde, ayçiçek yağı üretimi toplam bitkisel yağ üretimi içinde %98’lik bir paya sahiptir. Bursa ilinde faaliyet gösteren işletmelerin tamamını oluşturan 6 işletmede 1993 yılı itibariyle 116 000 ton ayçiçek tohumu ve 23 000 ton ham ayçiçek yağı işlenerek, 52 000 ton rafine ayçiçek yağı üretilmiştir. Bitkise] yağ üretiminde temel sorunlardan biri, düşük kapasite kullanımına neden olan hammadde teminidir. İncelenen işletmelerde kapasite kullanım düzeyi %20-79 arasında değişmektedir. Hammadde ihtiyacının karşılanmasında; hammadde olarak tohum ithal edilmesi veya ayçiçek tohumu yurtiçi üretim artışının teşvik edilmesi yerine, ham ayçiçek yağının ithalatı tercih edilmektedir. Bitkisel yağ sanayinde üretim iç pazara yönelik olup, bir miktar da rafine yağ ve margarin ihracatı yapılmaktadır.

Vegetable oils production had recorded a big amount of increase in last decades and concerning 1993, total production of vegetable oils had exceeded to 1 million tonnes in Turkey. It was determined that sunflotver oil production had the biggest share with 98% in the total vegetable oil production in Bursa province has a well-developed agro-food industry. In 1993, 52 000 tonnes refined sunflovver oil have been produced by processing 116 000 tonnes sunflower seeds and about 23 000 tonnes sunflower crude oil in the investigated 6 firms which were the ali of the active firms in Bursa. One of the main problems in the sunflower oil production was procurement of the raw material which has caused ratlıer low capacity-use. The level of capacity-use has been changed between 20-79% in the studied firms . There was a tendency to import sunflower crude oil in order to meet raw material need instead of importing raw material as seeds or giving intensives to increase domestic sunflower seeds production. Production of vegetable oils industry is oriented to domestic market and also small amount of refined oil and margarin have been exported.
