Türk Silahlı Kuvvetleri'ne bağlı askeri birliklerde tüketime sunulan peynirlerde aflatoksin M1 düzeylerinin araştırılması

Abstract

Bu çalışmada çok sayıda personeli bünyesinde bulunduran ve toplu beslenme faaliyetlerinin yoğun olarak gerçekleştiği Türk Silahlı Kuvvetleri’ne bağlı askeri birliklere alınan peynirler aflatoksin Mı yönünden incelenmiştir. Çalışmada materyal olarak, Bursa, Bilecik ve Eskişehir illeri başta olmak üzere toplam 16 ilde konuşlu askeri birliklere alman veya alınacak olan peynir numuneleri kullanılmıştır. Analizlerde her birinden 100’er adet olmak üzere toplam 300 adet beyaz peynir, kaşar peynir ve eritme peyniri kullanılmıştır. Yapılan analizler sonucunda peynir örneklerinin her birinde yaklaşık olarak % 1-2 oranında belirtilen sınır değerlerin üzerinde aflatoksin Mı’e rastlanılmıştır. Düzenlenen analiz raporları ile belirtilen numunelerin ilgili teknik şartnameler ve diğer yasal mevzuatlardaki sınır değerlerden fazla aflatoksin Mı ihtiva ettikleri belirtilerek tüketimlerine engel olunmuştur. Çok az sayıda da olsa numunelerde aflatoksin Mı saptanması, anılan gıda maddelerinin üretiminden tüketimine kadar geçen süreçte özellikle toksijenik nitelikli küf infestasyonlarmdan dolayısıyla aflatoksin Mı varlığından uzak tutulması için gerekli her türlü tedbirin arttırılarak alınması sonucunu doğurmaktadır. Ayrıca gerek standartlarımızda gerekse standartlar baz alınarak hazırlanmış olan Milli Savunma Bakanlığı ve Kara Kuvvetleri Komutanlığı Teknik Şartnamelerinde aflatoksin Mı için belirtilen sınır değerlerin aşağılara çekilerek, üreticilerin daha iyi üretim koşullarında hazırlanmış gıda maddelerini tüketime sunmaları sağlanmalıdır.

In this study, the cheeses that are bought to the dependent military units of Turkish Armed Forces, in which there are a lot of personnel in it’s structure and where collective nourishment activities are intensively executed, in means of aflatoxin Mı of which presence carries extensive health hazard risks for human health. Cheese samples which were bought or will be bought to military units located in 16 country of which Bursa, Bilecik and Eskişehir is at the top, used as a material in this study. Total 300 pieces formed from 100 pieces for each; white cheese, round cheese and cream cheese were used in the analysis. At the end of the analysis aflatoxin Mı was found proximately 1-2 per çent above the specified limit values in each cheese sample, and their consumption is stopped by pointing out that the mentioned samples contain aflatoxin Mı above the limit values that specified in the concemed technical spesification. Altough it is a liftle, the finding out the aflatoxin Mı in samples results as ali kind of precautions shold be increased and taken to remove mould infestations, especially the ones that has toxic characteristics, consequently aflatoxin Mı presence during the production to consumption process of the mentioned food materials. Furthermore, it should be provided that the producers present food materials, which are prepared in better production, conditions, to the consumption by decreasing limit values specified for aflatoxin Mı due to its extensive hazard risks for human health both in our standards and in Ministry of Defence and Land Forces Commandership Technical Spesifications, which were prepared based on standarts.
