Bursa ve Yalova illerinde faaliyet gösteren soğuk hava depolarının mevcut durumları, sorunları ve çözüm önerileri

Abstract

Bursa ve Yalova, bahçe bitkileri ürünlerinin muhafazası konusunda önemli illerimizdendir ve bu bölgede soğuk hava depoculuğu konusunda son zamanlarda önemli gelişmeler gerçekleşmiştir. Günümüzde depolama faaliyetleri bilim ve tekniğin de yardımıyla, ürünlerin uzun süreli muhafaza edilebilen modern tesislerde, makineler yardımıyla, soğutma ortamının sıcaklık ve oransal nem bileşimi kontrol edilerek üründeki bozulma ve çürümeler en aza indirilecek şekilde yapılmaktadır. Soğuk hava depoculuğunun dünyadaki ve Türkiye'deki gelişme sürecine paralel ivme ile Bursa ve Yalova illerinde gerçekleştirilen faaliyetler mercek altına alınarak, her iki ilde bulunan işletmelerin kapasiteleri, muhafaza ve ürün işleme teknolojileri, depolanan meyve ve sebze türleri ile günümüzde yaşanan sorunlar tespit edilmeye çalışılmıştır. Bursa ve Yalova illerinde bulunan yaş meyve ve sebze muhafazası yapan işletmelerin mevcut kapasitesi en az 2000 ton/yıl ve kullanabilir kapasitesi en az 3000 ton/yıl olan soğuk hava depoları üzerine yapılmıştır. İşletmeler muhafaza tür ve teknolojilerine (Normal Atmosfer, Kontrollü Atmosfer, Dinamik Kontrollü Atmosfer, Modifiye Atmosfer, Freshcut ve Donmuş) göre sınıflandırılarak; Yalova il genelinde 8, Bursa il genelinde 29 olmak üzere toplam 37 adet soğuk hava deposu incelenmiştir. İşletmelerde beş bölümden oluşan ve 39 ana soru 134 alt soru başlıklarına sahip anket çalışması yürütülmüştür. Yapılan bu çalışma sonucunda, mevcut durum tespit edilerek Bursa ve Yalova illerinde gerçekleştirilen depoculuk faaliyetleri hakkında, kurumlar ve kişiler göz önüne alındığında, kamu ile özel tüm paydaş ve bileşenlerin bir arada çalışması halinde sorunların çözülebileceği sonucuna varılmıştır.

Nowadays, with the help of science and technology of storage activities to the temperature and relative humidity composition of the cooling environment is controlled by using the machines in the modern facilities where the products can be kept for a long time about the deterioration and decay of the products that are minimized. The activities have carried out in the Bursa and Yalova provinces were investigated with the acceleration in parallel with the development process of the cold air storehouse both in the world and in Turkey and the problems encountered with the capacities, storage and processing technologies, stored fruit and vegetable types of the cold storage located on both sides were tried to be detected. Bursa and Yalova storages were selected on cold storage facilities with a minimum capacity of 2000 tons / year and the usable capacity of at least 3000 tons / year. Cold storages have been classified according to the storage types and technologies (Normal Atmosphere, Controlled Atmosphere, Dynamic Controlled Atmosphere, Modified Atmosphere, Freshcut and Frozen); A total of 37 cold storages were examined, 8 in Yalova and 29 in Bursa. The survey was carried out a questionnaire consisting of five sections and 39 main questions and 134 sub-questions. As a result of this work, the current situation is detected that cold storages activities in Bursa and Yalova when institutions and persons are taken into consideration, if the public and private stakeholders with all components work together, the problems can be solved.
